by on October 6, 2010

These three videos show you how to prepare Khoresht Bademjoon or Eggplant Stew with Sour grapes and chicken.

In the first video, take a look at the ingredients and how to prepare them for Khoresht Bademjoon. Pay attention to the tricks used when preparing chicken when cooking Persian food.

Take a look at the color that the chicken should be when you turn it over. Learn why the onions need to be prepared differently with this particular stew.

Pay attention to this video; as always, KShar teaches us a unique presentation of Khoresht Bademjoon.

I hope you enjoyed watching these videos. Please don’t forget to leave some comments right here for me. I love knowing that you watched the videos and what your thoughts are. Until next time. Keep it cooking…

I was just wondering how come you dont let the eggplants to be cooked with chicken so it absorbs the taste of the gravy.

salm Amir jon, cooking the eggplants you have to be careful as they cook fast. by putting them in the stew they tend to over cook and it would be hard to rescue them as a whole eggplant . i always cook the eggplant seperately and add some of the sauce to it while it is being cooked. but if you are cooking for your self and dont care how the stew look , you can mix every thing together. of course i believe that looks is as important as the taste. here i can not tell you ” keep it cooking” because you may over cook it.lol

I hope you get a chance to cook it, then you will agree that ” IT TASTES AS GOOD AS IT LOOKS “. thank you and keep it cooking.

What are sour grapes – they look like small green grapes. What is their flavor when eaten alone? Thank you.

KShar July 4, 2011 at 3:31 pm

Hello Christine, sour grapes are grapes that are picked before they ripe. they are sour and i use them for the flavor and they come in different forms, dry powder and juice. i hope that answers your question. Good to hear from you and keep it cooking.
