Armon, it seems that you have not had any luck cooking kotlet, so try it my way and you will see the difference. keep it cooking.

Dear KShar,

Aafarin (Bravo in English). I am an iranian transplant to the West Coast. I’ve been cooking the cuisine of my country since the age of ten, but there is quite a bit I do not yet know. I made your kotlet recipe and the dish was wonderful. Historically, my mom made them using shredded potatoes not yet cooked and did not use egg. I like both versions, but I think the egg is a sort of flavorful glue. Thank you for this wonderful service you provide to all of us ex-pats in the US and elsewhere outside Iran. I love that you go through the entire process at a pace we can maintain with you and I will try more dishes I do not know how to prepare. One question, I found my pan kept making making the oil brown and with kotlet particles so I had to replace it several times during the cooking process. Any suggestions? I was using extra virgin olive oil to try to keep them healthy. Can they be baked perhaps?

Also, your presentation elevates “our” food to a whole new level. Aafarin. I forwarded your site to all of my family members, some of whom have married non-Iranians who have taken up Persian cuisine.

You poured saffron over the meat. Was it Saffron in oil or was it in water or is it a saffron oil?

love watching the videos, but firstly you need to have the volume of your music a
little lower.
I think they would be better served with salad and gherkins, rather than chips as they have potatoes in them.
I add a little bit of chilli to mine to make them a little fiery.
By the way,yours did look delicious

Hi Kshar,

I have not found a recipe on Shamee (shamee nokhod). Wondered if you would do a session on how to cook Shamee .

Great shows and instructions– so far I’ve enjoyed watching, learning and enhancing my persian cooking.
