Whether you eat it as an appetizer, a snack, or as your main dish you will love Salad Olovieh. It is one of the most popular Persian dishes that does not include rice.

Wow this looks REALLY good. Could I use a roasted chicken from the grocery store and shred it by hand instead? Would this effect the flavor you are seeking? Second question…did you use the Persian pickles in this recipe…thank you in advance Kshar….keeep the videos coming!!!

KShar December 30, 2011 at 4:09 am

i would not recomand it. if you have to make sure you take of the skin and only use the breast of chitken i mean. lol
i use kosher over persion pickles.

Justin Mayahi December 29, 2011 at 10:06 pm

I also forgot to ask. how long will this keep in the fridge to snack on? I bet it would be really good in a sandwich with some fresh lavash bread or fresh pita…and even add some lettuce and tomato or onion to the sandwich for something different… thanks kshar.

KShar December 30, 2011 at 4:06 am

Justin you are on top of it. that is the way to do it. I choose pita over lavash.

Justin Mayahi December 30, 2011 at 5:47 pm

Kshar –
It would be helpful if you would list the recipe ingredients and directions for each dish so we can print it out when going to the grocery store or preparing so we don’t have to play the video while cooking.

Just a thought

Bev

Hi Kashar,

thank you kshar looks really good,i just made potato salad lebaneese style next time will be yours

Lilit June 22, 2012 at 3:49 am

Hi KShar. This may be a silly question, but how did you cook the potatoes and the chicken? Just boiled in hot water with salt? Do you peel the potatoes after they’re cooked? And does the chicken just get chunks of onion in the water?

Thank you! Also, is there a healthy alternative you would suggest to mayo that might taste similar?

KShar June 23, 2012 at 1:16 am

Hi Dear Lilit, boil the potato in salt water and peel the after they are cooked, boil the chicken in salt water with chopped onion.

Lilit July 18, 2012 at 4:13 pm

Thank you Chef!!

I was inspired after watching many many of your videos and drooling, to make the Salad Olovieh. I even took a picture of it (which I will send) for proof. Really liking your website and enjoy watching you make the recipes. You make it look very easy and most importantly, none of your recipes have all these “add-ons” that I have seen posted on a lot of websites (recipes).
One question though: how long can one keep the Saffron mixture before it loses it’s pungency and should it be stored in the refrigerator?
Again, thank you for setting up this website and taking the time to teach us. :)

KShar July 29, 2012 at 4:10 pm

Thank you dear Camellia for your kind words. You have to keep it in refrigerator and make sure before using each time add a little hot water to it. keep it cooking.

THANK YOU.

Satra December 20, 2012 at 6:55 pm

Dear Kshar,
thanks so much for the wonderful videos. One can see the passion and enjoyment of cooking in your face. I have one question. Would it be possible to make this salad without chicken; in other words make it vegetarian? if so, do you recommend adding anything extra of something?
Thanks again

KShar December 22, 2012 at 3:55 am

of course, i cook it for my daughter without chicken. go for it and keep it cooking.
